A step above the ol’ bread & butter.
I love bread. And potatoes. And cereal. I just really love carbs. I also eat a lot of avocados, eggs, turkey and cheese. Last week I had this brilliant thought….why not just combine my favorite things?
That’s how what I call “summer toast” was born.
This is a super simple, super quick (I have no time) and super delicious recipe. It’s also full of protein, healthy fats and whole grains – so it’s good for you (if you’re into that).
Summer Toast Ingredients:
1 slice whole grain toast
1 oz. sharp cheddar shredded cheese
2 slices turkey
1/2 tablespoon olive oil
pepper, salt, parsley to taste
Mix cheese, olive oil, pepper, salt and parsley together in a bowl. Spread evenly over bread. Top with turkey and broil until cheese is melted.
Smash avocado and mix with pepper and salt to taste. Fry egg over stove.
Top toast, cheese and turkey with avocado mix and fried egg. Serve right away.
This is the perfect blend of creamy and savory. It’s also my go-to meal. Enjoy!
